Bread comes off the line and has to cool to the right temperature before it is bagged. Bag it too warm, and it sweats inside the package, which leads to condensation, reduced shelf life, mold, and customer complaints. 

Today most baking plants conduct sample checks, meaning most product gets bagged without moisture or temperature inspection. When a retailer or buyer is the one who finds the soggy product, the listing and the account are at risk.

What the system detects

Over-temperature at pre-packaging

Reads the full surface temperature profile of every product, not one point, and alerts when a unit is too warm to bag for its specific SKU.

Surface moisture and condensation

A bottom camera inspects the underside, where moisture shows first, and flags product that will sweat in the bag.

Severity-based alarms

Warning and critical thresholds are configurable per product and per defect type, so a small number of defects prompts a spot check and a larger number prompts the line to stop.

Detection models automatically adapt to SKUs

Plants running multiple SKUs through a single packaging line change products several times a day, and each one has its own normal. Every product carries its own thermal profile and its own thresholds, selectable on the HMI at changeover, so the right standard follows the SKU without re-tuning by hand. The system also measures the plant's ambient condition in the frame, so it holds accuracy as conditions shift through the day and across seasons.

Integration

Thermal cameras mount above and below the line at the cooling-to-packaging step, with the bottom camera viewing the underside through the existing line. An Eigen OneView edge device processes every image on site and drives an operator HMI that shows the result for the last product inspected. 

Results and images stream to OneView Cloud for tracking and review. At changeover, operators select the product on the HMI and set its temperature and moisture thresholds in seconds, no engineering support required. Alerts can run through the HMI and can extend to plant-floor signals and PLC integration as the deployment hardens.
